Monthly Feature - Sun Dried Tomato

Like all our flavors, Sun Dried Tomato is delicious as a dip, but it's more known for all the different ways you can use it.

Everyone's favorite is a quick and easy bruschetta

Drain a 28 ounce can of petite diced tomatoes well and add a packet of Sun Dried Tomato and 1/4 cup of extra virgin olive oil.

Let it sit for a few hours and serve with pita chips

Creamy Sundried Tomato Sauce

3 Tablespoons butter
2 cloves garlic minced
1 pkg Doxie Sundried tomato
1 sm jar sun dried tomatoes, chopped.
⅔ cup heavy cream
⅔ cup milk
2 Tablespoons Parmesan cheese
¼ cup shredded mozzarella cheese
salt to taste
black pepper to taste
1 pound pasta of your choice

1. Cook pasta, drain when done.
2. While pasta is cooking, Heat a skillet over medium heat. 3.Add the butter to melt.
4.Add the garlic, Doxie mix and sundried tomatoes. Stir and let it cook 2 minutes. 
5.Add the heavy cream and milk. Whisk and bring to a simmer. Turn up the heat if needed to medium high.
6.When simmering, reduce the heat to low and add the Parmesan and mozzarella. Whisk constantly to melt the cheese and let the sauce thicken. 7.Remove from the heat when the cheeses are melted.
8.Season to taste with salt and black pepper.

1 pack Doxie mix sun dried tomato
1/3 cup apple cider vinegar
1/3 cup honey
1/4 cup water
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
Boneless pork shoulder or butt

1. Put pork into crockpot.
2. Mix everything except water together in a bowl and pour onto pork.
3. Add water to bottom of crockpot.
4. Cover and cook on HIGH for 5 to 6 hours or LOW for 8 to 10 hours, until the pork is fall-apart tender.
5. Shred pork and stir all together.
6. Serve on buns with BBQ sauce of choice.
