Great Summer Recipe
Summer is a time of go, go, go, so I love easy dinner recipes that I can prep in advance. Even better, ones that don't require turning on the oven!
This cold tortellini salad is great because you can customize it any way you want. Add whatever veggies your family likes, as much or as little cheese as you want, throw in leftover chicken or pork tenderloin. My hubby loves it with sliced pepperoni.
To make it cook a bag of frozen cheese tortellini per the instructions.
Chop up as many red, orange, or yellow peppers as you want. Me, I like *lots*. Maybe throw in some red onion depending on what your family likes.
Mix 3/4 cup of extra virgin olive oil, 1/4 cup of white wine vinegar, and one package of Asiago Roasted Garlic and whisk it really well. (it's also great with Sweet Basil Parmesan mix!)
Toss cooked tortellini, peppers, cherry tomatoes, and chopped veggies with enough of the dressing to be well coated, then stir in at 5 ounces of shredded parmesan cheese. (not the powdery stuff, get the fresh shredded)
